10 Keto Salad Recipes You’ll Love (Even If You Hate Salads!)
- 4 cups mixed greens (I like to mix spinach, arugula, and romaine lettuce)
- 1 lb boneless, skinless chicken breasts
- 1 medium avocado diced
- 1/2 cup cherry tomatoes halved
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped almonds
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Preheat your oven to 375 F. Season the chicken breasts with salt and pepper, then bake them on a baking sheet for 20-25 minutes or until cooked through (internal temperature at least 165 F as measured by a meat thermometer). Let them cool for a few minutes before slicing them into strips.
In a large mixing bowl, combine the mixed greens, sliced chicken, diced avocado, halved cherry tomatoes, crumbled feta cheese, and chopped almonds.
In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper until well combined.
