Why You’ll Love This Low Carb Taco Casserole
- This recipe is keto-friendly in addition to being low carb. In fact, it’s technically a keto recipe because of the low net carbs per serving, but I’ve labeled it “low carb” because it includes refried beans, an ingredient not typically found in keto recipes.
- It will remind you of taco salad. Unlike my Keto Taco Casserole, a fully baked recipe, this recipe is served with a layer of fresh ingredients over the baked ingredients.
- This deconstructed taco can be served in low carb or keto-friendly tortillas (or regular tortillas if serving to those who aren’t on a low carb diet). Simply spoon your serving into your favorite low carb tortilla!
